Coq au Vin Meatballs

dice the carrot

mince the  garlic cloves

chop the leek  and parsley

slice the mushrooms

combine ground chicken with salt, pepper,  garlic powder,  dried onion, breadcrumbs and egg

roll into meatballs

add mushrooms to a hot skillet, cook until they release moisture, add oil, cook until brown, remove

add butter and bacon, cook until crispy, remove

add meatballs,  brown all over,  remove from skillet

add garlic, carrot  and leek,  cook for 3 minutes

stir in salt, pepper, thyme, paprika  and flour

deglaze with  white wine,  simmer for 5 minutes

pour in chicken broth and cream,  bring to a boil

stir in mushrooms, parsley and bay leaf

add meatballs,  simmer for  15 minutes

top with  bacon and parsley
