Cod with White Wine Parsley Sauce

finely chop the chorizo

mince the shallot

mince the garlic

finely chop the parsley

pat the cod fillets dry, season with salt & pepper

heat oil and butter over medium, add cod fillets

cook, 3-4 minutes per side

remove from skillet

add garlic and shallot, cook for 2 minutes

add lemon juice

stir in butter

add flour, stir until incorporated

add white wine, simmer for 1 minute

pour in milk, stir until combined

add salt and pepper, simmer for 3-5 minutes

meanwhile, cook chorizo until crispy

stir in parsley

add cod fillets, simmer for 2-3 minutes

top with chorizo, pistachios and black pepper
