Cod with Herb Butter Sauce

mince the garlic

finely chop the shallot

slice the scallions

chop parsley, cilantro and basil

pat the cod fillets dry

season with the spice rub

heat oil in a skillet

add butter

place cod fillets  in the skillet

cook, about 2-3 minutes pr side

remove from skillet

add shallot and garlic, cook 1 minute

deglaze the skillet with vegetable broth

add a splash of lemon juice

add fish sauce, scallions and fresh herbs

bring to a simmer

add butter, stir until melted

return cod fillets to the sauce

spoon sauce over fish

sprinkle with flaky salt and black pepper

finish off with chili pepper and lemon juice
