Coconut Shrimp Stew

combine shrimp with  salt, pepper, cumin,  paprika, garlic powder  and lime juice

dice the potatoes

chop the bell pepper

finely chop the shallot

mince the garlic

heat oil and butter over high, place half of  the shrimp in a single layer

sear 30 seconds per side, remove from pot

repeat with remaining shrimp

add garlic, shallot  and  bell pepper,  cook for 3 minutes

add potatoes and  chicken broth

stir in fish sauce, soy sauce and sambal oelek, bring to a boil

stir in crushed tomatoes

pour in coconut milk

stir in peanut butter

simmer for 15-20 minutes

add shrimp, simmer for 2 minutes more

finish off with cilantro,  black pepper and chili oil
