Coconut Rice with Salmon

pat the salmon dry, season with salt, pepper, paprika and garlic powder

grate ginger and  garlic cloves

dice the onion

heat oil and butter  over medium high,  add salmon fillets

 sear 3 minutes  per side,  remove from skillet

add garlic,  ginger and onion,  cook for  1 minute

stir in rice and  pour in  chicken broth

add coconut milk, simmer until  al dente,  stir occasionally

when ready,  stir in basil,  corn kernels  and lime juice

add salmon,  top with  black pepper  and basil,  simmer for  3 minutes
