chop the white parts  of the scallions,  grate the ginger  and garlic

heat the oil,  add ginger, garlic  and scallions,  cook for 1 minute

stir in sugar, coriander,  crispy chili oil,  fish sauce and  soy sauce

add chicken broth, coconut milk,  lemon zest and  juice, bring to a boil

add cod, cover,  poach for  6-8 minutes

finish off with remaining scallions  and crispy chili oil
