Chinese Beef and Broccoli Noodles

thinly slice the beef across the grain

combine with cornstarch, white pepper, oil and soy sauce

cut broccoli into bite-sized pieces

cut carrot into bite-sized pieces

slice scallions, separating white and green parts

grate ginger and garlic cloves

combine water with cornstarch

add soy sauce, brown sugar, sesame oil, pepper, mirin and  oyster sauce

cook noodles 1 minute less than package directions

drain, run briefly under cold water

heat oil over high until smoking hot

place beef in a single layer, fry undisturbed  for 1 minute

then stir fry for 30 seconds until brown

remove from wok

add 1 tbsp oil, broccoli and carrot, stir fry for 2 minutes

add white scallion parts, ginger and garlic, fry for 30 seconds

add prepared sauce, cook for 3 minutes

add green scallion parts and beef, mix to combine

add noodles, toss and serve!
