Chili Mac and Cheese

grate the cheddar

dice the onion

mince the  garlic cloves

heat oil and butter  over medium high,  add ground beef,  break up into pieces

add onion  and garlic,  cook for  3 minutes

stir in salt,  pepper, paprika,  cumin, thyme and  chipotle chili pepper

pour in  beef broth,  puréed tomatoes  and milk,  bring to a boil

add elbow pasta,  simmer for  10 minutes

turn off the heat,  stir in cheddar

finish off with  chopped parsley  (optional)
