Chili Hoisin Lamb Stir-Fry

thinly slice the  lamb rump, combine with oil, cornstarch, soy sauce and  white pepper

mince the  garlic cloves

deseed and chop the chili peppers

chop the white parts  of the scallions,  cut the green parts  into larger pieces

combine  hoisin sauce with water, soy sauce,  rice vinegar, cornstarch,  cumin and sesame oil

heat oil over high, place lamb  in a single layer,  sear for 1 minute

stir and fry for  1 minute,  remove from wok

add oil, garlic,  chili peppers and  white parts of the scallions,  cook for 30 seconds

stir in asparagus  and green parts  of the scallions

pour in prepared sauce, simmer  for 2 minutes

add lamb,  cook for 1 minute
