Chicken with Gyoza Noodles

mince the  garlic cloves

chop the scallions

tear the shiitakes  into small pieces

combine chicken broth  with soy sauce, mirin,  oyster sauce, sesame oil, sugar, cornstarch and  sambal oelek

cook shiitakes until they  release moisture, add oil,  cook until browned

add ground chicken,  break up into pieces

add garlic and scallions,  cook for 5 minutes

deglaze with a  splash of the  prepared sauce

add gyoza wrappers,  1 by 1

pour in the remaining  sauce, stir gently  making sure the  wrappers are not  sticking to each other

cover, simmer for  2 minutes over low
