slice the chicken horizontally lenghtwise

gently pound with a meat tenderizer

add flour to  a shallow bowl, beat eggs, salt and pepper in a second

combine panko with Parmesan and lemon zest

dredge chicken into flour, then dip in beaten eggs

finally dredge in Parmesan mixture

add tuna, mayo, pepper, lemon juice, soy sauce, anchovy and garlic

mix until smooth

heat oil in a large skillet

add chicken cutlets

cook 2 minutes per side

transfer to a plate layered with paper towel, repeat with the remaining cutlets
