cut chicken thighs into bite-sized pieces

cut baby potatoes in half

peel and slice  the carrots

mince the garlic

finely chop the onion

chop the parsley

heat oil and butter over medium high, add chicken

place in a single layer,  sear undisturbed for 3 minutes, then stir for 1 minute

remove from skillet

add garlic, onion and carrots, cook for 2 minutes

stir in salt, pepper and oregano

add flour, stir until incorporated

add potatoes and chicken

pour in  chicken broth

add bay leaf, bring to a boil,  simmer over  medium low for 20 minutes

when ready,  add half-and-half, simmer for 5 minutes

finish off with lemon juice and parsley
