cut the carrots into half-moons
dice the onion
mince the garlic cloves
heat butter over medium, add onion, garlic, carrots, thyme and pepper, cook for 3 minutes
add kale and chicken broth, cover, simmer for 10 minutes
combine ricotta with flour, baking powder and salt
pour in cream and add dumplings, cover, simmer for 5-7 minutes
carefully stir in shredded cooked chicken
