Chicken Ricotta Meatballs in Romesco Sauce

add all ingredients for the meatballs to a bowl

mix until just combined

roll into 2 tbsp size balls

heat oil and butter in a skillet

add meatballs

brown on all sides, about 10-15 minutes

meanwhile, make romesco sauce... ground almonds, spices and lemon zest

add the remaining ingredients

pulse until smooth

add sauce to the skillet

stir gently, simmer for 3-5 minutes

top with parsley and black pepper, serve
