Chicken Piccata

slice the lemon

mince the garlic

chop the parsley

slice the chicken horizontally lenghtwise, gently pound with a meat tenderizer

combine flour with salt, pepper and paprika, dredge chicken in flour

heat oil and butter in a nonstick skillet

place lemon slices in a single layer, cook for 30 seconds per side

remove from skillet

add chicken cutlets

cook for 2-3 minutes per side

remove from skillet

add garlic, cook for 1 minute

add capers, cook for 1 minute more

deglaze with chicken broth, simmer for 2 minutes

stir in butter

add cream, bring to a simmer

add lemon juice, miso paste and parsley

return chicken to the skillet

add lemon slices

finish off with parsley, black pepper and capers
