Chicken Nicoise

combine  chicken thighs  with salt, pepper,  paprika  and garlic powder

finely chop  the red onion

mince the garlic

chop the parsley

heat oil and butter  over medium high

add chicken,  cook for 5 minutes

turn, cook  for 3 minutes

remove from skillet

add onion and garlic,  cook over medium low  for 3 minutes

add rosemary and  chicken broth,  simmer for  2 minutes

pour in  crushed  tomatoes

add olives, parsley  and thyme,  bring to a boil

add chicken thighs

simmer for  10 minutes

top with thyme  and black pepper
