Chicken in Butternut Squash and Mushroom Cream Sauce

slice off the ends of the butternut squash

cut in half

peel with a  vegetablepeeler

cut into slices, then into sticks

cut the sticks  into cubes

chop the mushrooms

mince the garlic

finely chop the onion

season the chicken breasts

heat oil in a skillet

add mushrooms, cook until golden brown

remove from skillet

add oil and butter

add chicken breasts

cook about 8 minutes per side

remove from skillet

add butternut squash, cook until browned, 5 minutes

stir in butter

add garlic, onion and sage, cook until fragrant

add chicken broth, scrape up the brown bits from the bottom

bring to a boil, cook for 2 minutes

pour in cream

add miso paste & Parmesan, stir until dissolved

add mushrooms

add chicken to the sauce, simmer for 3 minutes

finish off with black pepper and chili flakes
