Chicken in Butternut Squash Mushroom Cream Sauce

slice off the ends of  the butternut squash

cut in half

peel with a  vegetable peeler

cut into slices, then into thick sticks

cut the sticks  into cubes

slice the mushrooms

mince the  garlic cloves

dice the onion

season the  chicken fillets  with salt, pepper  and paprika

heat oil over high

add mushrooms,  cook until  golden brown

remove from skillet

add oil  and butter

add chicken fillets

sear about  8 minutes per side

remove from skillet

add butternut squash, cook until browned, 5 minutes

stir in butter

add garlic, onion  and sage,  cook until fragrant

add chicken broth, scrape up  the brown bits from the bottom

bring to a boil, simmer for  2 minutes

pour in cream

add miso paste  and Parmesan, stir until dissolved

add mushrooms

add chicken, simmer for  3 minutes

finish off with  black pepper  and chili flakes
