Chicken Drumsticks with Tomatoes and White Beans

chop the sage leaves

finely chop the shallot

mince the garlic

rub in chicken drumsticks with Cajun seasoning

heat oil and butter over medium high, add chicken

cook until golden brown, 8 minutes per side

remove from skillet

add garlic and shallot, cook until fragrant

stir in salt, pepper, Italian seasoning and tomato paste

add sage leaves

deglaze with chicken broth

add white beans and cherry tomatoes

return chicken to the skillet

nestle between tomatoes, pour in released juices

top with sage leaves, black pepper and chili flakes

bake for 20 minutes at 200°C/ 400°F

reduce heat to 160°C/ 320°F bake for 20 minutes more
