Chicken Corn Chowder

remove casings from sausages, cut into pieces

chop the pepper

chop the carrot

chop the potato

cut one corn into pieces

remove the kernels from the second corn

chop the chili pepper

finely chop the onion

mince the garlic

heat oil over medium, add onion, garlic and carrot, cook for 3 minutes

stir in salt, pepper, oregano and cumin

add sausage

cook until it starts to brown

add bell pepper, cook for 2 minutes

add potato and corn

pour in chicken broth, bring to a boil

add chili pepper, cover, simmer for 15 minutes

meanwhile, prepare your toppings and grate the cheddar

when ready, turn off the heat, add lime juice and cream

add cheddar, stir until combined
