Chicken Cacciatore

slice the mushrooms

dice the carrots

finely chop the shallot

mince the garlic

chop the parsley

roughly chop the olives

season both sides of the chicken fillets with salt, pepper and paprika

heat oil and butter over medium add chicken

cook, 5 minutes per side

remove from skillet

add mushrooms, cook until browned

remove from skillet

add shallot, garlic and carrots, cook for 3 minutes

add salt, pepper and rosemary, cook for 2 minutes

deglaze with chicken broth, simmer for 2 minutes

stir in tomato paste

add crushed tomatoes, bring to a simmer

add mushrooms, olives and parsley

return chicken to the skillet, simmer for 3 minutes

finish off with parsley and chili flakes
