Chicken and Pumpkin  Thai Curry

season chicken fillets  with salt, pepper and garlic powder

dice the pumpkin

grate the ginger and garlic cloves

heat oil and butter over medium high, add chicken fillets

cook 5-8 minutes, per side

remove from skillet

add pumpkin,  cook for 3 minutes

stir in the garlic and ginger

add turmeric,  brown sugar and  fish sauce

stir in Thai  red curry paste

pour in broth, bring to a boil, simmer for  3 minutes

add coconut milk

add lemon juice, simmer for  3 minutes

add chicken, simmer for  2 minutes

top with cilantro
