Cheesy Orzo with Roasted CherryTomatoes

add tomatoes  to a baking sheet, sprinkle with  olive oil

season with  salt and  pepper roast for 15 minutes  at 400°F/ 200°C

mince the  garlic cloves

dice the shallot

add pine nuts  to a hot skillet,  toast until golden

remove from skillet

add olive oil

add garlic  and shallot,  cook for  1 minute

stir in orzo

pour in milk  and vegetable broth

simmer over low,  for 10-15 minutes

stir occasionally

when ready, stir one more time

stir in Parmesan

season with  salt and pepper

finish off with  roasted tomatoes  and their juices, top with pine nuts
