add mozzarella, pecorino, cream, flour and spices to a bowl

stir to combine,  set aside

mince the garlic

finely chop the shallot

chop the mushrooms

set skillet over high, add mushrooms, fry for 8 minutes

after they released their moisture, add oil

add garlic and shallot, cook for 1 minute

season with salt & pepper

stir in thyme and balsamic vinegar

crack the eggs into a  small bowl, one at a time

roll out the dough

transfer to a tart pan, press to sides

prick the bottom with a fork

spread the cheese mixture

top with mushrooms

drop the eggs between the mushrooms

season with thyme salt and pepper

gently lay the pastry down over the filling

brush with egg wash, transfer to the oven
