Cheese Ravioli with Sautéed Brussels Sprouts

remove the outer leaves from Brussels sprouts, cut off the tip

cut in half

thinly slice the shallot

mince the garlic

chop the sage

chop the hazelnuts

add hazelnuts to a skillet, toast until fragrant

remove from skillet

add oil and butter

add bacon, cook until golden brown

transfer to a bowl, leaving the bacon grease in the skillet

add Brussels sprouts, place in a single layer, cook undisturbed for 5 minutes

cook until golden brown, about 8 minutes, stir occasionally

stir in butter

add shallot and garlic, cook until fragrant

add sage and spices

cook the ravioli, about 2-3 minutes

when ready, scoop up 1/4 cup cooking water

stir in balsamic vinegar, bacon and cooking water

drain the ravioli, drop into the skillet

toss, finish off with hazelnuts, black pepper and chili flakes
