cheese polenta with chorizo & shrimp

peel and devein the shrimp, mince the garlic, chop the scallions, cut the chorizo into slices

grate the Manchego cheese

heat the oil in a skillet

add chorizo

cook for a minute, then slide aside

add shrimp,  cook for 2 minutes

add garlic

season with oregano, cayenne pepper, smoked paprika & S+P

add extra olive oil

stir in the tomatoes

when the tomatoes start to burst, press to release their juices

add olives and scallions

add lemon juice and butter

stir and set aside

bring chicken stock and milk to a boil

add polenta

stir continuously about 2 minutes

turn off the heat season with salt & pepper

stir in Manchego cheese

add butter

cover, let stand for a minute
