Cauliflower  Bolognese

chop the cauliflower

mince the  garlic cloves

dice the onion

heat oil over  medium high,  add panko,  cook for 3 minutes

stir in salt,  chili flakes and  sage

add parmesan, remove from pot

add oil and pancetta, cook until browned, remove from pot

 add butter  and cauliflower,  sauté for  3 minutes

add the remaining cauliflower,  sauté for  3 minutes more

add onion  and garlic,  cook for  5 minutes

stir in  chili flakes,  thyme, sage,  paprika, pepper  and salt

pour in  chicken broth and crushed tomatoes

 add tomato paste, simmer over low  for 15 minutes

meanwhile,  boil pasta al dente  in salted water

when ready,  scoop up 1/2 cup cooking water,  add 1/4 cup to  the sauce

 drain the pasta

add Parmesan  and pancetta

finish off with  lemon juice and  black pepper
