Cacio e Pepe Style Mashed Potatoes

peel and cut the  potatoes into cubes

to a pot, add potatoes,  cold water and salt,  boil for 15 minutes

meanwhile,  grate the pecorino

check potatoes  for doneness, drain

in the same pot,  melt the butter,  add black pepper,  cook for 30 seconds

pour in half-and-half,  bring to a simmer

turn off the heat, add  potatoes and  pecorino, mash!!
