chop the white  parts of the scallions,  slice green tops  into larger pieces

grate the carrots,  garlic cloves  and the apple

combine soy sauce  with brown sugar,  rice vinegar and  sesame oil

heat oil  over high, add  ground beef

break up  into pieces,  cook until  browned

stir in  white parts  of the scallions,  garlic, carrots,  apple and  gochujang sauce

pour in the  prepared sauce,  simmer for  1 minute

add  remaining scallions  and udon noodles,  stir to combine
