Braised Chicken in Mushroom Leek Sauce

slice the mushrooms

thinly slice the leeks

mine the garlic

season the chicken

heat oil and butter in an ovenproof skillet

add chicken thighs, skin side down cook for 2 minutes

reduce the heat, cook for 10 minutes more

turn, cook for 5 minutes

remove from skillet

remove excess grease, set aside

add mushrooms, cook until they start to brown

add 1 tbsp chicken grease & garlic, cook for 1 minute

add leeks, cook for 3 minutes

stir in flour

deglaze with chicken broth, simmer for 2 minutes

add soy sauce, mirin, brown sugar and miso

return chicken to skillet

top with black pepper  and red pepper flakes, transfer to the oven
