dice the onion

mince the  garlic cloves

heat oil and butter  over high,  place beef  in a single layer,  sear for 1 minute

stir and brown  for 2 minutes

add garlic  and onions,  cook for 3 minutes

pour in beef broth,  add tomato paste,  stir to combine

stir in salt, pepper,  brown sugar,  chili flakes  and thyme

add crushed tomatoes

add bay leaves,  cover and simmer  for 2 hours  over low

when ready,  boil pappardelle  all dente  in salted water

finish off with  chopped parsley
