Baked Pineapple Chicken Thighs

rub chicken thighs with  salt, pepper, paprika  and garlic powder

cut off the ends of  the pineapple and slice  into two equal parts

slice off the skin,  then cut into  thin slices

remove the core  from each slice

mince the  garlic cloves

grate the ginger

chop the chives

heat oil and butter  over medium high  in an ovenproof skillet,  add chicken

sear for 2 minutes,  then reduce heat  to medium,  sear for 10 minutes

turn, sear  for 5 minutes

remove from skillet

place pineapple  in a single layer

sear 1 minute per side,  remove from skillet

add garlic and ginger,  sauté for 1 minute

deglaze with  pineapple juice,  simmer for  2 minutes

add brown sugar,  sesame oil,  low sodium soy sauce

stir in ketchup,  simmer for  3 minutes

add chicken

bake 25 minutes  at 400°F/ 200°C

add chili flakes and  pineapple slices

bake for 15 minutes  at 320°F/ 160°C

finish off with  chives
