Baked Meatballs with Orzo in Roasted Pepper Sauce

add ingredients for the  tomato sauce to a  food processor, blend until smooth

dice the eggplant  mince the garlic,  dice the shallot

combine the  ingredients  for the meatballs

roll into 2-tbsp  meatballs

heat oil over  medium

add meatballs

brown on all sides

remove from skillet

add oil, shallot  and garlic, cook for  2-3 minutes

add eggplant, cook for 5 minutes

add orzo

pour in prepared  tomato sauce

add salt, pepper,  paprika, oregano,  thyme, basil  and chili flakes,  cover, simmer for  8 minutes

add meatballs  simmer for  5 minutes

sprinkle with  grated mozzarella

tranfer to the oven,  bake for 10 minutes
