Baked Meatballs with Orzo in Roasted Pepper Sauce

add ingredients to  a food processor, blend until smooth

cut the eggplant into small cubes, mince the garlic, finely chop the shallot

combine the ingredients for the meatballs

roll into 2-tbsp meatballs

heat olive oil in  a large skillet

add meatballs

brown on all sides

remove from skillet

add olive oil, shallot & garlic, cook for 2-3 minutes

add eggplant, cook for 5 minutes

add orzo

whisk in tomato sauce

add seasoning, cover and simmer for 8 minutes

add meatballs and simmer for 5 minutes

sprinkle with mozzarella

place in the oven
