Baked Greek Potatoes with Halloumi

cut the potatoes in half

add potatoes to a pot, cover with hot water

add 1 tsp salt, bring to a boil, cook for 10 minutes

in the meantime, chop the parsley

cut halloumi into thin slices

make the spicy aioli: to a bowl, add mayo, garlic cloves, lemon juice, salt, black pepper and cayenne pepper

stir to combine

when ready, drain the potatoes, add to a baking dish

toss with olive oil, salt, pepper, paprika, garlic powder and oregano

bake 20 minutes at 425°F/ 220°C

when ready, sprinkle with parsley and lemon juice

arrange halloumi on top, sprinkle with chili flakes, broil for 5 minutes
