30 Minute Halloumi Curry


slice bell pepper into strips

cut halloumi into bite-sized pieces

finely chop the onion

grate ginger and garlic gloves

chop the cilantro

heat oil over medium, add halloumi

cook until golden all over, about 3-4 minutes

remove from skillet

add bell pepper, cook for 5 minutes

add onion, garlic and ginger cook for 2 minutes

stir in chili flakes, tomato paste and red curry paste

add crushed tomatoes

add chickpeas and soy sauce

pour in coconut milk, bring to a boil

simmer for 10 minutes

add halloumi, simmer for 1 minute

finish off with cilantro and chili flakes
