3 Cheese Roasted Spaghetti Squash with Sausage


chop the mushrooms

mince the garlic

finely chop the shallots

heat skillet over high, then add mushrooms

cook until they release some moisture, then add oil and cook for 3 minutes

add garlic and shallots, cook until fragrant

stir in spices

add sausage, break up into pieces

cook until browned

add puréed tomatoes, bring to a boil

add Parmesan, simmer for 5 minutes

cut the squashes in half lenghtwise

scoop out the seeds

season with salt and pepper, sprinkle 2 tbsp cheese  mixture into the bottoms

divide the filling

top with remaining cheese mixture, sprinkle with  red pepper flakes

cover with foil,  transfer to the oven
