20 Minute Chorizo Pasta

mince the  garlic cloves

grate the Parmesan

remove casings  from sausages,  cut into  smaller pieces

boil rigatoni  al dente  in salted water

heat butter  over medium,  add chorizo

cook for  5 minutes

stir in garlic

add tomato paste,  cook for 3 minutes

stir in oregano,  salt and pepper

pour in cream,  bring to  a simmer

reduce heat  to low,  stir in Parmesan

drain rigatoni,  reserving 1 cup,  cooking water

add rigatoni  and 1/2 cup  cooking water,  toss to combine

finish off  with parsley
