20 minute  Beef and Shiitake Noodle Stir-Fry

cut steak  in thin slices  across the grain

transfer to a bowl

add soy sauce,  corn starch and peanut oil

stir to combine, set aside to marinate

meanwhile, boil the rice noodles  according to  package directioins

slice the shiitakes

mince the  garlic cloves

grate the ginger

cut the scallions  in large pieces

prepare the sauce

heat the wok  until steaming hot, add peanut oil  and beef

stir-fry for 1-2 minutes, then transfer to a plate

add peanut oil and shiitakes

stir-fry for 1-2 minutes or until golden brown

add garlic and ginger, stir fry for 1 minute

return beef to the wok add the prepared sauce

stir for 1 minute

stir in scallions

add rice noodles
