Shrimp with Garlic Sautéed Mushrooms

Shrimp with garlic sautéed mushrooms. A quick and easy flavor packed dinner idea, jazzed up with smoky hints of paprika, white wine and a touch of lemon. Extra bonus? It’s ready in just 20 minutes! Great for a tapas party or as dinner served with bread or over creamy polenta.

Shrimp and mushrooms in an aromatic garlic-infused white wine sauce are hard to beat! This combo is absolutely amazing. Mushrooms are utterly delicious when sautéed with garlic. Add some juicy shrimp to this combo and the whole dish transforms into a flavor party! It’s perfect for a busy weeknight, yet elegant enough to make for any special occasion. Absolutely delicious and super easy to make!
 
Let’s get into the details. First, we briefly marinate the shrimp, this adds a more intense flavor to the shrimp when seared. In the meantime, we prepare all the ingredients for a super fast cooking process. When you have everything ready to go, we sear the shrimp, this takes only a few minutes. Next, cook the mushrooms, add spices, thinly sliced garlic and some olive oil. We let the mushrooms soak up all the garlicky flavors, while we stir constantly to prevent garlic from burning and becoming bitter.
 
Deglaze the skillet with white wine. Add some parsley and lemon juice. Stir in shrimp, sprinkle some red pepper flakes, and done!

RECIPE NOTES

  • Make sure you have all your ingredients prepared before you head to the stove since, start to finish, this cooks in no time. It’s also great for a dinner party because you can prepare everything ahead of time. Just serve the shrimp and mushrooms in a shareable skillet with some toasted bread on the side, sprinkle more red pepper flakes and parsley on top. It’s always a big hit with guests.
  • Of course, it’s also perfect as weeknight dinner, since it’s so easy to make. Serve with a big leafy salad and some bread, with pasta or over polenta. So delicious!
  • You can leave the tails on your shrimp, or remove them, it’s totally up to you. The tails make for a nice presentation and add more flavor to the sauce.
  • Make ahead: marinate the shrimp and refrigerate in an airtight container for up to 8 hours. 
  • Storage: Leftovers can be refrigerated in an airtight container for up to 2 days.

Shrimp with Garlic Sautéed Mushrooms

Ingredients

  • 8 tbsp olive oil, divided
  • 1 pound/450 g shrimp, peeled and deveined
  • ½ tsp salt, black pepper, smoked paprika
  • ¼ tsp dried garlic
  • 9 ounces/250 g mushrooms, roughly chopped
  • 6 garlic cloves, thinly sliced
  • ½ cup/120 ml white wine, like Pinot Grigio or Chardonnay
  • 2 tbsp chopped parsley
  • 1 tbsp cold unsalted butter
  • 1 tbsp lemon juice
  • ½ tsp red pepper flakes

Instructions

  1. Combine shrimp with 1 tbsp olive oil, and ¼ teaspoon each: salt, garlic powder, smoked paprika and black pepper. Toss and set aside while you prepare the other ingredients. If you want to marinate them longer, no problem, transfer the shrimp to the fridge and chill for 30 minutes or up to 8 hours.
  2. Thinly slice the garlic cloves, roughly chop the mushrooms and chop the parsley.
  3. Heat 3 tbsp oil in a large skillet over high. Place shrimp in a single layer, sear undisturbed for 1 minute. Turn, and sear for 1 minute more or until nice and golden. Remove from skillet.
  4. Add mushrooms, cook until they start to release moisture. Add the remaining oil and cook until golden brown. Stir in the remaining salt, pepper and paprika. Add garlic, stir constantly for 1 minute or until the garlic is fragrant and starts to soften.
  5. Deglaze with white wine, cook for 2 minutes. Add parsley, lemon juice and butter. Stir until the butter is melted. Add shrimp and red pepper flakes. Toss for 30 seconds, or until the shrimp are heated through.
  6. Serve with crusty bread and a leafy salad. Enjoy!
