Ingredients: 24 jumbo pasta shells (about 8 oz); 1 tbsp olive oil; 1 tbsp unsalted butter; 1.3 pounds/600 g shrimp, peeled and deveined; 1 tbsp Cajun seasoning; ½ tsp each: salt, black pepper; 3 garlic cloves, minced; 1 onion, finely chopped; 8 ounces/225 g cream cheese; 1 cup/240 g grated Gruyère cheese, divided; ½ cup/100 g grated Parmesan, divided; ¼ cup sun-dried tomatoes, drained and chopped; 1 egg; 1 tbsp unsalted butter; 4 garlic cloves, minced; ¼ tsp cayenne pepper; ½ tsp salt; 1 tsp each: black pepper, Italian seasoning; ½ cup/120 ml fish broth; 1 cup/240 g heavy cream; 1 tbsp lemon juice; 1 tbsp chopped parsley, more for serving; 1 cup/200 g grated Parmesan; chili flakes, for serving
