One Skillet Tortellini with Sausage

One skillet tortellini with sausage. An easy 30 minute meal that comes together with just a few ingredients. A quick tomato sauce with Italian sausage and tender bell pepper, tossed with cheese tortellini for a delicious dinner. The tortellini cook directly in the sauce, meaning less mess and a lot more flavor. It’s hearty and comforting… and makes for the best leftovers. Round it out with a simple salad and enjoy.

The sauce is loaded with tender bell pepper, Italian sausage and a simple tomato sauce. It’s an easy and fun one pan dinner that everyone will ask for again and again. It’s that kind of weeknight meal that’s guaranteed to become a new favorite.

To keep it easy and maximize the flavor at the same time, we stir the fresh tortellini into the simmering sauce, there’s no need to boil it separately here. The pasta soaks up all that aromatic richness and lends its starchy goodness for a thicker sauce.

This dinner is greater than the sum of its parts, it’s so incredibly easy to make, but tastes like you spent hours on it. An effortless meal that deserves to be made as soon as possible. You can pair it with a quick side salad drizzled with a yogurt dressing.

RECIPE NOTES

  • you can make this recipe in advance, just prepare the sauce until step 4. The only thing left to do is to reheat and add tortellini right before serving
  • swap tortellini for ravioli or short shaped pasta
  • use any of your favorite tortellini, like 4-cheese, spinach, meat, ricotta…
  • substitute white wine for chicken broth
  • serve with a big side salad drizzled with yogurt dressing
  • use spicy or sweet Italian sausage, or swap it for ground pork or chicken. If you don’t have Italian sausage on hand, use herbed sausage, ground pork or ground chicken, just add some extra red pepper flakes and fennel seeds
  • leftovers can be stored in an airtight container and refrigerated for up to 3 days

One Skillet Tortellini with Sausage

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 3 tbsp olive oil
  • 1 red bell pepper, chopped
  • 1 pound/450 g Italian sausages, casings removed
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup/120 ml white wine, like Pinot Grigio
  • 1/2 tsp salt, black pepper, dried thyme, dried oregano
  • 3 tbsp double concentrated tomato paste
  • 1 1/2 cup/360 ml chicken broth
  • 12 oz/350 g fresh tortellini
  • 3 heaped tbsp grated parmesan, more for serving
  • freshly ground black pepper, for serving
  • red pepper flakes, for serving

Instructions

    1. Get all the prep done before you start cooking. Mince the garlic and finely chop the onion.
      Remove the veins and seeds from the bell pepper, cut into bite sized pieces. 
      Remove casings from Italian sausages.
    2. Heat oil in a large skillet over medium high. Add bell pepper and sauté until it starts to soften, about 5 minutes. Add sausages, break it up into pieces and cook for 3 minutes. Stir in garlic and onion, cook for 2 minutes. Deglaze with white wine, simmer for 2 minutes. Add salt, pepper, thyme, oregano and tomato paste. Stir until incorporated. Add broth and bring to a boil.
    3. Add tortellini, try to push them into the sauce. Let simmer over medium until the tortellini is plump and tender, 3 to 5 minutes, or according to package instructions.  
    4. Stir in grated parmesan, finish off with freshly ground black pepper and red pepper flakes. Serve immediately.
