- you can make this recipe in advance, just prepare the sauce until step 4. The only thing left to do is to reheat and add tortellini right before serving
- swap tortellini for ravioli or short shaped pasta
- use any of your favorite tortellini, like 4-cheese, spinach, meat, ricotta…
- substitute white wine for chicken broth
- serve with a big side salad drizzled with yogurt dressing
- use spicy or sweet Italian sausage, or swap it for ground pork or chicken. If you don’t have Italian sausage on hand, use herbed sausage, ground pork or ground chicken, just add some extra red pepper flakes and fennel seeds
