Meat and shrimp stew

This one pot pork and shrimp is perfect for a delicious dinner.  The meat is paired with tomatoes and bell peppers and then everything gets cooked in the same pot to release lots of flavors. And the shrimps just seal the deal:)

prep time 4 hours or overnight | cook time 70 minutes
serves 4

Ingredients

the stew

  • 600 g pork loin
  • 300 g shrimps
  • 1 onion, finely chopped
  • 2 large tomatoes, peeled and sliced
  • 400 g baby potatoes, peeled
  • 1 tablespoon tomato paste
  • 2 bell peppers, cut into cubes
  • 2 cups warm broth
  • 1 bay leaf
  • fresh thyme
  • olive oil
  • salt and freshly ground pepper

marinade

  • 6 cloves garlic, finely chopped
  • 3 tablespoons olive oil
  • 3 tablespoons red wine
  • 3 teaspoons sweet  paprika
  • 1 clove, crushed
  • salt and freshly ground pepper

Instructions

Cut the meat into small pieces, place in a bowl and combine with all the marinade ingredients. Wrap the bowl in foil and let stand in the fridge for 4 hours or overnight.

Heat 2 tablespoons olive oil in a large pot, add the meat and cook until golden brown. Add the onion and simmer for 10 minutes over medium heat. Then add the tomatoes, tomato paste, bay leaf and bell peppers, simmer for 10 minutes. Pour the warm broth and season with thyme, salt and pepper. Bring to a boil and add the potatoes. Simmer over low heat, covered, for 40 minutes.

Peel and devein the shrimps. Add to the meat and simmer for another 10-15 minutes. Enjoy!
