Leek and rice soup

Servings serves 4-6

serving dumplings | Leek and rice soup

A creamy leek soup with rice, green peas and spinach. The leeks offer lots of flavor, the rice and green peas a smooth consistency. 

Ingredients

  • 5 leeks
  • 1 onion
  • 2 handful spinach
  • 1/4 cup rice
  • 1/2 cup green peas (frozen)
  • 4 cloves garlic
  • 2 L vegetable broth
  • a pinch of grated nutmeg
  • a pinch of cayenne pepper
  • 1 teaspoon thyme
  • 3 tablespoons olive oil
  • salt and black pepper

also

  • sour cream
  • chopped parsley

Instructions

Clean the leeks and chop the white and light green parts. Heat the oil in a large pot , add the leeks, chopped onion and garlic, season with salt and pepper. Simmer over medium heat, stirring constantly, about 10 minutes.
Add the cayenne pepper, peas and rice. Pour the hot broth and bring to a boil, then reduce the heat. Boil for 20 minutes. Add the spinach and cook for 3 minutes, then blend until smooth. Season with salt and pepper and add nutmeg.

Serve hot, garnish each soup with a spoon of  sour cream and chopped parsley.
