Watermelon gazpacho

Watermelon gazpacho

Paprika watermelon gazpacho with cherry tomatoes, chili and avocado. A refreshing snack for the hot summer days. 

20 minutes | serves 4


1 kg cold watermelon
1 cold red paprika, chopped
200 g cold cherry tomatoes
1 avocado, chopped
1 red onion, finely chopped
1 clove garlic, finely chopped
3 tablespoons lemon juice
3 tablespoons chili oil
salt and black pepper
cherry tomatoes, red chili and mint to garnish


Peel the watermelon, and cut into small pieces.
Put all the ingredients for the gazpacho in a food processor  and blend. Add salt and pepper.
Garnish with cherry tomatoes, mint and chili. Enjoy!
