Crispy Baked Potato Wedges

Crispy oven baked potato wedges. Deliciously crispy on the outside and perfectly tender in the middle. Jazzed up with a good kick of garlic, smoked paprika and oregano. These potato wedges are the perfect side dish or snack.

Making potato wedges is really easy. We cut the potatoes lengthways in quarters, then each quarter in half, so we end up with 8 potato wedges.

What to serve with baked potato wedges?

If you want them as a snack

  • aioli
  • ranch
  • spicy sriracha mayonnaise

If you want them as a side 

  • with beef, ribs or pork chops, fish or chicken
  • with hamburgers

RECIPE NOTES

  • what potatoes work best? Russets, Yukon Gold, Charlotte, Ratte, Gala or Fingerling potatoes
  • use your favorite seasoning, like sweet paprika, parsley, thyme, rosemary or minced garlic instead of powdered garlic
  • sprinkle some parmesan on top for a decadent result

Crispy Baked Potato Wedges

Crispy Baked Potato Wedges

Prep Time 10 minutes
Cook Time 50 minutes
Total Time 1 hour

Ingredients

  • 1 kg/2.2 pounds medium-large potatoes
  • 5 tbsp olive oil
  • flaky salt for serving

  • 2 tsp each: garlic powder, onion powder
  • 1 tsp each: smoked paprika, black pepper, dried oregano, salt

Instructions

  1. Preheat the oven to 180°C/350°F.
  2. Rinse and clean the potatoes. Cut each potato lengthways into quarters, then cut each quarter in half, to make a total of 8 wedges. Make sure they are about the same thickness and size.
  3. Add potato wedges to a bowl, sprinkle with olive oil and spices. Toss well to coat evenly.
  4. Place potato wedges in a single layer on a large baking tray. Transfer to the oven, bake for 30 minutes.
  5. Remove from the oven, flip the potato wedges over and bake for 20 minutes more or until the wedges are deeply golden, crisp and cooked through when pierced with a fork.
  6. Remove from oven and sprinkle with flaky salt. Serve immediately.
