Chocolate mousse cake

Double chocolate mousse cake, gloriously intense and rich with dark chocolate. This enticing dessert is sure to please the chocolate-lover.

Ingredients

sponge cake

  • 3 eggs
  • 3/4 cup flour
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 heaped tablespoon cocoa powder

chocolate mousse

  • 500 ml heavy cream
  • 1/4 cup sugar
  • 180 g dark chocolate

chocolate sauce

  • 1/4 cup heavy cream
  • 60 g dark chocolate
  • 1 teaspoon honey
  • 2 tablespoons sugar
  • 1 tablespoon butter

also

  • 1 cup strong coffee
  • 2 tablespoons rum
  • cocoa powder for sprinkling

Instructions

Preheat the oven to 180°C.
Beat the eggs with sugar. Sift the flour, baking powder, cornstarch and cocoa and mix until smooth. Pour into a 23 x 23 cm mold lined with baking paper. Bake for 25 minutes, remove from the oven and allow to cool.

Melt the chocolate au bain marie. Beat the cream with the sugar until stiff. Add the chocolate and stir gently with a spatula.
Soak the cake in coffee with rum, top with the chocolate mousse and place in the fridge for 2 hours.

Make the sauce; pour the cream into a pan, add the honey and sugar, stir until sugar is dissolved over medium heat. Then add the chocolate and stir until chocolate is dissolved. Turn off the heat and add the butter, stir until dissolved.

Remove the cake from the fridge, sprinkle with cocoa powder and garnish with the chocolate sauce. Enjoy!
