Fast and easy chicken stir-fry with green beans and mushrooms in a creamy tarragon sauce. It’s a very tasty dish with delicate flavors inspired by French cuisine.
- 2 double chicken fillets (500 g)
- 200 g green beans
- 200 g mushrooms
- 1 shallot, finely chopped
- 4 spring onions
- 2 cloves garlic, finely chopped
- 1oo ml chicken broth
- 100 ml double cream
- 1 tbl dried tarragon
- 1 tbl peanut oil
- salt and freshly ground pepper
Rinse the beans and cut off the ends. Put in salted boiling water and cook for 3 minutes.
Cut the chicken into strips, clean the mushrooms and cut into slices. Cut the spring onions into rings.
Heat the oil in a wok, add the chicken and stir-fry for 3-5 minutes. Add the green beans, mushrooms, shallot and garlic and fry for a further minute. Then pour the broth and cream and cook everything for 2 minutes. At the end add the spring onions and tarragon. Sprinkle with salt and pepper.
Serve immediately with rice or noodles.
