A quick and easy salad with white asparagus and oranges tossed in a citrus vinaigrette. It is really fruity tasting and full-flavored salad that goes great as a snack with bread or as a side dish with meat or fish.
500 g white asparagus
5 tablespoons vegetable oil
2 tablespoons white wine vinegar
salt and freshly ground pepper
Peel the asparagus and trim the ends, cut in half. Bring 1L water to boil, add asparagus and simmer for 5 minutes, longer if the asparagus are larger (up to 8 minutes). Drain and rinse under cold water.
Peel 2 oranges and cut into thin pieces. Stir with the asparagus. Sprinkle with oil, vinegar and the juice of the third orange. Season with salt and black pepper, sprinkle with chopped parsley.
