Almond strawberry cake topped with meringue

Delicate almond cake with strawberries, crunchy almonds and meringue. This cake is delicious and simple to make, it can’t go wrong:)

Ingredients

almond cake

  • 500 g strawberries
  • 150 g flour
  • 100 g ground almonds
  • 200 ml heavy cream
  • 7 g baking powder
  • 100 g sugar
  • 3 egg yolks
  • 2 small eggs
  • 4 tablespoons almond flakes

meringue

  • 3 egg whites
  • 100 g sugar
  • pinch of salt

Instructions

Wash the strawberries, remove stems and cut in half.
Grease a 22 x 23 cm cake mold with butter and line with baking paper.
Sift the flour and baking powder into a bowl, add the ground almonds and stir. Then add the cream, sugar, eggs and egg yolks. Stir everything together until smooth. Put into the cake mold, place the strawberries on top and sprinkle with almond flakes. Place in the oven for 35 minutes at 180°C.

Beat the egg whites for the meringue to stiff peaks while adding sugar a little at a time, add salt at the end.
Cover the cake with meringue and place again in the oven for 15 minutes at 170°C. Then reduce the oven temperature to 60°C and let the meringue dry for 20 minutes.
Allow to cool before serving. Enjoy!
