You’ll need potatoes, whole milk, truffle butter, salt, and black pepper.
One of my favorite tricks is boiling the potatoes unpeeled in chicken broth instead of water. If you prefer peeling first, that’s totally fine too, just don’t skip the broth.

How do truffles taste?
Truffles are a type of underground mushroom. The most common varieties you’ll come across are black and white truffles.
Black truffles are more widely available and have a deep, earthy flavor that works beautifully in sauces, butters, pasta, and creamy dishes. White truffles are more intense, with garlicky, musky notes and a powerful aroma. They’re usually shaved raw over finished dishes and come with a much higher price tag due to their rarity.

Best potatoes for truffle mashed potatoes
Yukon Gold potatoes are my top choice for truffle mashed potatoes thanks to their creamy texture and naturally buttery flavor. Red potatoes work well if you prefer a slightly firmer mash, while russet potatoes give you a lighter, fluffier result. All three pair beautifully with truffle butter, so it really comes down to texture preference.

Storing and reheating
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
To reheat, warm gently in a nonstick saucepan over medium-low heat with a splash of milk, stirring often. If frozen, thaw overnight in the fridge before reheating.
Truffle Mashed Potatoes
Ingredients
- 2.2 pounds gold potatoes
- 5 cups chicken broth
- 3 tbsp truffle butter - at room temperature
- 1 cup whole milk - hot
- salt - to taste
- ½ tsp coarsely ground black pepper
Instructions
- Add the unpeeled potatoes to a large pot and add chicken broth. Cover and bring to a boil over medium-high heat, then reduce heat to a simmer. Cook for about 30 minutes, until potatoes are very soft or until knife-tender when testing for doneness. Drain, when ready.
- Peel the potatoes by picking each one up with a fork and peel with a paring knife. Return the potatoes to the pot, and add truffle butter and milk. Mash until smooth and creamy.
- Taste and season with salt and black pepper. Transfer to a serving bowl. Enjoy!
- Tip: Top with melted unsalted butter.
